Beef and Broccoli Stir Fry with Flavor

Quick, family-friendly stir-fry with seared beef and tender broccoli in a glossy soy-sugar sauce. Balanced textures and nuttiness from sesame oil make this a weeknight staple.

Ingredients
  

  • Flank steak, 1 lb, thinly sliced
  • Broccoli, 1 lb
  • Oil, 2 Tbsp
  • Low-sodium soy sauce, 6 Tbsp
  • Light brown sugar, 3 Tbsp
  • Cornstarch, 1 1/2 Tbsp
  • Ground ginger, 1 tsp
  • Garlic, 2 tsp (3 cloves minced)
  • Water, 1/2 cup (plus 1-2 Tbsp more if needed)
  • Sesame oil, 2 Tbsp
  • Sirloin or ribeye if flank unavailable
  • Tamari (gluten-free alternative)
  • Cane or coconut sugar substitutions
  • Frozen broccoli florets (as substitute)

Method
 

  1. Heat 1 Tbsp oil in wok or large skillet over medium-high heat
  2. Add beef and cook until browned, 3-4 minutes (no need to fully cook yet)
  3. Push beef to side; stir-fry broccoli with remaining 1 Tbsp oil for 2-3 minutes
  4. Combine soy sauce, brown sugar, cornstarch, ginger, garlic, water, and 1 Tbsp sesame oil into bowl
  5. Return beef and broccoli to pan with sauce, simmer gently until beef is fully cooked and sauce thickens (10-12 minutes)
  6. Add remaining 1 Tbsp sesame oil and simmer 1-2 minutes
  7. Serve over steamed rice if desired

Notes

Frozen broccoli works but reduce cook time by 1 minute
Use olive or avocado oil if sesame oil unavailable
Thicken sauce further by adding additional cornstarch
Store leftovers in airtight containers up to 3 days
Reheat gently to preserve texture
