Ingredients
  

  • 2 medium sweet potatoes, cut into ½-inch cubes
  • 2 cups shredded cooked chicken thighs or breasts
  • 1 cup BBQ sauce (mild, medium, or hot)
  • 1 medium red onion, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • 2 tablespoons green onions, finely chopped (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Peel and cut sweet potatoes into uniform cubes
  3. Season sweet potato cubes with salt, black pepper, and smoked paprika
  4. Heat olive oil in a 12-inch cast-iron skillet over medium heat until shimmering
  5. Add sweet potatoes and sauté 7-10 minutes until tender
  6. Add red onion and corn, sauté 5 minutes
  7. Add shredded chicken and BBQ sauce, stirring to coat
  8. Reduce heat to medium-low and simmer 10 minutes
  9. Sprinkle cheddar cheese over the mixture
  10. Transfer skillet to oven and bake 15-20 minutes until bubbly and golden
  11. Garnish with green onions before serving

Notes

Substitute cheddar with Monterey Jack for milder flavor or pepper jack for heat
Use fresh sweet potatoes and corn for best results
