Ingredients
  

  • 1 pound ground beef
  • ½ cup breadcrumbs
  • 1 egg
  • 2 cloves garlic
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup barbecue sauce
  • 2 cups cooked rice
  • 1 cup corn kernels (fresh or frozen)
  • 1 ripe avocado
  • 1 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • Fresh cilantro (garnish)

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Mix ground beef, breadcrumbs, egg, garlic, onion powder, smoked paprika, salt, and pepper in bowl
  3. Shape into 1½-inch meatballs
  4. Bake meatballs 22-25 minutes until golden
  5. Blend avocado, Greek yogurt, lime juice, cumin, and ½ cup water until smooth
  6. Toss cooked rice with remaining barbecue sauce
  7. Assemble bowls with rice, meatballs, corn, and avocado sauce
  8. Garnish with cilantro

Notes

Substitute ground turkey for leaner meat
Use crushed cornflakes instead of breadcrumbs
Vegetarian: replace egg with ¼ cup oat/water "egg"
Use crushed corn kernels for grill-roasted flavor
Opt for gluten-free barbecue sauce if needed
