Ingredients
  

  • 1 box Vanilla cake mix
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 package Banana pudding mix (Jell-O Classic brand recommended)
  • 2 cups cold milk (almond or oat milk for non-dairy)
  • 1 cup whipped topping (or homemade whipped cream)
  • 2 medium ripe bananas
  • 1 cup crushed vanilla wafers (use Diet Pepsi wafers for gluten-free)

Method
 

  1. Preheat oven to 350°F (175°C)
  2. In a large bowl, mix cake mix, eggs, oil, and vanilla extract as per package instructions
  3. Pour brownie batter into a greased 8x8-inch baking pan
  4. Bake for 22 minutes
  5. While brownies are baking, whisk pudding mix with cold milk until thick
  6. Mash 1 ripe banana into the pudding mixture, then stir in remaining banana and whipped topping
  7. Pour puddings over the warm brownies
  8. Sprinkle crushed vanilla wafers on top
  9. Let cool to room temperature before refrigerating overnight
  10. Serve in 16 slices
