- Set the pressure cooker to sauté mode and melt the butter.
- Add the sliced onions and minced garlic to the pot, sautéing until softened.
- Turn off the sauté function.
- Season the chicken breasts with kosher salt and black pepper.
- Place the chicken breasts into the pot on top of the onions.
- Add the dried rosemary, dried basil, dried thyme, balsamic vinegar, and chopped tomatoes.
- Pour the chicken stock over the ingredients.
- Secure the pressure cooker lid and set to high pressure for 20 minutes.
- Allow for a natural pressure release for 5 minutes before venting the remaining steam.
- Serve the chicken with the accumulated balsamic-tomato sauce.
Notes
Use a high-quality balsamic vinegar to ensure a deeper, more balanced acidity. If you prefer a thicker sauce, you can simmer the remaining juices on the sauté setting for an additional 2-3 minutes after removing the chicken. Store leftovers in an airtight container in the refrigerator for up to 3 days.
