- Strain yogurt: Fold muslin cloth, pour yogurt into cloth. Hang over bowl for 1 hour until firm.
- Blend base: Whisk sugar and cream until sugar dissolves. Add strained yogurt and whisk aggressively.
- Add flavor: Fold in vanilla extract to avoid lumps.
- Water bath bake: Place ramekins in baking dish with 1/2-inch hot water. Bake at 350°F until center holds when tested (28 minutes).
Notes
Substitute condensed milk with 1 cup coconut sugar + 1/2 cup plant milk if preferred.
