  • 6-8 bone-in, skin-on chicken thighs
  • 1/3 cup extra virgin olive oil
  • 1 tbsp freshly minced garlic
  • 1 tbsp Dijon mustard
  • 2 tsp dried herbs (thyme, rosemary, or Italian seasoning)
  • 1.5 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 lemon, zested and halved

Method
 

  1. Whisk together the olive oil, minced garlic, Dijon mustard, dried herbs, salt, pepper, and lemon zest in a large mixing bowl.
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. Add the chicken to the marinade and toss thoroughly to ensure even coating.
  4. Cover and marinate at room temperature for 30 minutes or refrigerate for up to 12 hours.
  5. Preheat your oven to 425°F.
  6. Place the marinated chicken skin-side up on a sheet pan, allowing excess marinade to drain off.
  7. Roast the chicken for 25 to 30 minutes, or until the skin is golden brown and the internal temperature reaches 165°F.
  8. Remove from the oven and squeeze fresh lemon juice over the finished chicken before serving.

Notes

For the crispest skin, ensure the chicken is patted very dry before applying the marinade. If using a refrigerator marinade, let the chicken sit at room temperature for 15 minutes before baking to ensure even cooking.
