Ingredients
  

  • 2 English cucumbers, sliced
  • 1 large avocado, pitted and peeled
  • 1/3 cup chopped green onion
  • 2 Tbsp lime juice (or 1 medium lime, freshly squeezed)
  • 2 Tbsp olive oil
  • 1 tsp sea salt (or 3/4 tsp table salt)
  • 1/8 tsp black pepper

Method
 

  1. Wash and slice English cucumbers
  2. Pit and peel avocado, then dice
  3. Chop green onions, separating white and green parts
  4. In a bowl, mix lime juice, olive oil, sea salt, and black pepper
  5. Add diced avocado, cucumber slices, and green onion parts to the dressing
  6. Gently toss until ingredients are combined
  7. Serve chilled, or refrigerate for 1-2 hours for better chilling

Notes

Use organic cucumbers for reduced bitterness
Persian cucumbers work as an alternative
Adjust sharpness by varying the proportion of green onion parts
