  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup lemongrass powder
  • 1/4 cup extra virgin olive oil
  • 1/4 cup soy sauce
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon lemon pepper
  • Scallions for garnish

Method
 

  1. In a mixing bowl, whisk together lemongrass powder, olive oil, soy sauce, lime juice, Worcestershire sauce, garlic salt, and lemon pepper.
  2. Place chicken thighs in a large zip-top bag and pour the marinade over them, ensuring the meat is well coated.
  3. Seal the bag and refrigerate for at least 30 minutes to allow flavors to penetrate.
  4. Preheat your air fryer to 380°F (193°C).
  5. Arrange the chicken thighs in the air fryer basket in a single layer, skin side up.
  6. Cook for 18 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  7. Remove from the air fryer and let rest for 5 minutes before serving with a garnish of sliced scallions.
