Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1/2 cup garlic dill pickle brine
  • 1/2 cup plus 2 tbsp all-purpose flour
  • 1/3 cup panko breadcrumbs
  • 2 tbsp Cajun seasoning
  • 2 tbsp cornstarch
  • 1/2 tsp MSG (optional)
  • 2 large egg whites
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 1 tbsp white miso paste
  • 2 tsp hot sauce
  • 4 brioche slider buns
  • 4 green leaf lettuce leaves
  • 1 large dill pickle, sliced

Method
 

  1. Cut each chicken breast in half crosswise to create four cutlets and pound them to 1/2-inch thickness.
  2. Place chicken in a bag with pickle brine and refrigerate for 4 to 8 hours.
  3. Whisk flour, panko, Cajun seasoning, cornstarch, and MSG in a shallow bowl.
  4. In a separate bowl, whisk together egg whites and buttermilk.
  5. Remove chicken from brine, pat dry, then dip into the flour mixture, then the egg mixture, then back into the flour mixture.
  6. Preheat air fryer to 375°F.
  7. Spray chicken with oil and air fry for 12 minutes, flipping halfway through until golden and crispy.
  8. Whisk mayonnaise, miso paste, and hot sauce together to make the spread.
  9. Assemble sliders by spreading the sauce on buns, adding lettuce, the crispy chicken, and pickle slices.

Notes

Ensure the chicken is patted dry after brining to help the crust adhere properly. You can adjust the hot sauce quantity to suit your family's heat preference. Store leftover chicken in an airtight container for up to 3 days and reheat in the air fryer to maintain crispiness.
