- Combine chicken, kefir, lime juice, and a pinch of salt in a bowl and refrigerate for 6 to 12 hours.
- Whisk panko, parmesan, almond powder, and thyme in a shallow dish.
- Remove chicken from kefir, letting excess liquid drip off.
- Press each chicken piece firmly into the breading mixture to coat thoroughly.
- Preheat air fryer to 375°F (190°C).
- Arrange chicken bites in a single layer in the air fryer basket.
- Lightly mist with olive oil spray.
- Cook for 10 minutes, flipping halfway through, until golden brown and crispy.
Notes
Use gluten-free panko for a wheat-free option. If you do not have fresh thyme, dried basil is an excellent substitute. Ensure the chicken is in a single layer in the air fryer to achieve maximum crispiness.
