Method
- Cut each chicken breast in half horizontally to create four thinner cutlets.
- Place each piece between plastic wrap and pound with a meat mallet until uniform 1/2-inch thickness.
- Season both sides of the chicken generously with salt and pepper.
- Prepare a dredging station with three shallow bowls: flour, beaten eggs, and panko breadcrumbs.
- Coat each piece in flour, shake off excess, dip in egg, then press firmly into panko crumbs.
- Preheat air fryer to 375°F (190°C).
- Lightly spray the air fryer basket and chicken cutlets with cooking oil.
- Place cutlets in the basket in a single layer, ensuring they do not overlap.
- Air fry for 12 minutes, flipping halfway through, until golden brown and cooked through.
- Whisk together ketchup, Worcestershire sauce, oyster sauce, and sugar in a small bowl to make the dipping sauce.
Notes
Ensure you use panko breadcrumbs for the signature crunch. If needed, you can use cornstarch as a gluten-free substitute for the flour. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
