Ingredients
  

  • 2 large boneless skinless chicken breasts
  • 0.5 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce (ensure alcohol-free)
  • 1 tablespoon oyster sauce
  • 2 teaspoons sugar
  • Salt and pepper to taste
  • Cooking oil spray

Method
 

  1. Cut each chicken breast in half horizontally to create four thinner cutlets.
  2. Place each piece between plastic wrap and pound with a meat mallet until uniform 1/2-inch thickness.
  3. Season both sides of the chicken generously with salt and pepper.
  4. Prepare a dredging station with three shallow bowls: flour, beaten eggs, and panko breadcrumbs.
  5. Coat each piece in flour, shake off excess, dip in egg, then press firmly into panko crumbs.
  6. Preheat air fryer to 375°F (190°C).
  7. Lightly spray the air fryer basket and chicken cutlets with cooking oil.
  8. Place cutlets in the basket in a single layer, ensuring they do not overlap.
  9. Air fry for 12 minutes, flipping halfway through, until golden brown and cooked through.
  10. Whisk together ketchup, Worcestershire sauce, oyster sauce, and sugar in a small bowl to make the dipping sauce.

Notes

Ensure you use panko breadcrumbs for the signature crunch. If needed, you can use cornstarch as a gluten-free substitute for the flour. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
