Air Fryer Chicken Fried Rice

This simplified, one-pot air fryer chicken fried rice delivers authentic takeout-style flavor without the need for a wok. By utilizing the air fryer's convection heat, this recipe ensures perfectly browned chicken and aromatic, seasoned rice in just a single efficient cycle. It is a nutritious, balanced weeknight dinner featuring lean protein, vibrant vegetables, and warming spices like ginger and Chinese five-spice, all prepared with minimal cleanup.

Ingredients
  

  • 2 skinless chicken breasts, diced
  • 1 tsp mild curry powder
  • 250g long-grain microwave white rice
  • 1 tbsp hoisin sauce
  • 1 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • 1 tsp Chinese five spice
  • 1/2 tsp ginger, minced
  • 1/2 red onion, finely diced
  • 1/2 carrot, grated
  • 1 tin garden peas, drained well
  • Salt and pepper to taste

Method
 

  1. Coat the diced chicken breast evenly with curry powder, salt, and pepper in a medium bowl.
  2. Place the chicken into the air fryer basket and cook for 7 minutes at 200°C until browned.
  3. In a separate large mixing bowl, combine the microwave rice with hoisin sauce, soy sauce, garlic powder, five spice, ginger, diced onion, grated carrot, and drained peas.
  4. Mix thoroughly until all rice grains are well coated in the sauce.
  5. Add the seasoned rice mixture into the air fryer basket with the chicken.
  6. Cook for an additional 8 minutes at 200°C, tossing halfway through to ensure even heating.

Notes

Ensure the peas are drained very well to prevent the rice from becoming soggy.
If using raw rice, it must be pre-cooked before adding it to the air fryer.
Substitute chicken breast with turkey breast if preferred.
