  • 2 whole boneless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon Dijon mustard
  • 4 slices deli turkey ham
  • 4 slices deli Swiss cheese
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko bread crumbs
  • 1/3 cup grated Parmesan cheese

Method
 

  1. Slice each chicken breast horizontally and pound to 1/4 inch thickness.
  2. Season chicken with salt and pepper then spread mustard on the surface.
  3. Layer cheese and turkey ham, then roll tightly and secure with toothpicks.
  4. Set up a breading station with flour in one bowl, beaten egg in another, and panko mixed with Parmesan in a third.
  5. Coat each roll in flour, dip in egg, then press firmly into the panko mixture.
  6. Place in the air fryer basket and cook at 375°F for 18 minutes, turning halfway through until golden and cooked through.
